Carrot Curry Canelés, a fusion savory treat

Savory Carrot Curry Canelés are wonderful flavor packed curry bites, beautifully baked in a quintessential French fluted shape.

It’s Food ‘n Flix time and this month it is also a very special cross-over with Cook the Books! In both groups this month two host picks the same movie/book that pertains to food. I prepared for the book/movie “The Hundred Foot Journey” a fusion Indian/French recipe: Carrot Curry Canelés

To participate we had to either read the book or watch the movie, or do both. Then participants made a recipe inspired by the film. It could be any recipe you wanted. Both groups are a lot of fun so consider joining!

How to make a good La Résolution

Do you make resolutions? I do and making the resolution to drink La Résolution from Unibroue for the rest of the year just might be my best decision yet!

I am so proud of this Greater Montreal (Chambly) brewery ! Let me introduce you to La Résolution, a dark ale with spicy character inspired by a recipe our brewmaster Jerry Vietz created for his friends. At 10% alcohol, its spicy caramel aroma evolves on the palate into pleasant and complex notes of toffee with reminiscence of a tasty gingerbread. The perfect balance between spicy, caramel and roasted malt flavours is complemented by a nice roundness and persistent finish.

What should I serve with it? Spicy Thai style dishes, an excellent complement for cheese fondue to adjust the liquid’s consistency and also perfect with gingerbread or carrot cake.

La Résolution brownies

Chocolate Caramel Brownies à la Résolution

Prep Time: 20 minutes

Cook Time: 40 minutes

Yield: Serves 15


  • 8 ounces 70% dark chocolate (8 big pieces), chopped
  • 3/4 cup caramel / toffee bits
  • 6 tbsp melted butter
  • 1 cup unbleached flour
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp instant coffee
  • 1 generous pinch of salt
  • 4 large eggs (room temp.)
  • 1 cup white sugar
  • 1 cup La Résolution beer (shelf temp.)
  • 1/4 cup pecan nuts, coarsely chopped
  • 1 cup semi-sweet chocolate chips
  • Fleur de sel


  1. Preheat oven to 375°F or 190ºC.
  2. Melt the chocolate, the caramel and the butter in a bain-marie. Mix well. Keep warm.
  3. In the meantime, pour the flour, cocoa, coffee, and salt in a big bowl and mix well. Set aside.
  4. Mix the eggs and sugar at high speed with an electric mixer for about 2-3 minutes, until you get a light and foamy texture.
  5. Pour the chocolate mixture into the egg mixture and mix at medium speed until homogenous. Then, add the flour mixture, the beer and nuts and continue to mix until homogenous.
  6. Cover a 9x13 edged baking pan with parchment paper. Pour in the mixture and sprinkle it with chocolate chips. Add Fleur de sel to your liking.
  7. Oven bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool completely. Cut and enjoy!

Gobi Pakora, an Indian Cauliflower Fritter

Aromatic spiced bouquets of cauliflowers are drenched in batter and lightly fried. The result is a classic Indian snack called Gobi Pakora.

I still remember very clearly the first time I went to an Indian restaurant. I was probably 16 and my friend, Helen 23, had suggested it. This lunch was probably the first defining exotic meal I had, one of the first bricks of a path I built that lead me down this blog adventure. So thank you Helen! I remember I played it safe and ordered Chicken Tandoori. But I fell in love. I am not sure what else I had that time but the following Indian meals often included today’s recipe, a staple snack or vegetable side dish, Cauliflower fritters known as Gobi Pakora.
